GREEK SALAD with TZATZIKI SAUCE


Some weeks ago, I celebrated a friends birthday at a Greek restaurant. And there was not one raw vegan dish on the menu, not even vegan. All salads (I usually go for salad, if there is nothing else) came with tzatziki sauce from dairy. 
I started wondering if I could make a raw vegan tzatziki sauce - and here it is. It is spiced with my own Greek seasoning mix and only contains almonds, no other nuts. The base of the sauce is plain almond yogurt. You find the recipe below and can also use it as cake filling, smoothie extra or eat it plain.
This raw vegan Greek salad with tzatziki sauce makes a perfect party salad or can be used as dip for all sorts of veggies. 
You can freeze the rest of the seasoning mix and use it for other dishes as well.
Here is what you need for this colorful salad and the tangy, light dressing.


GREEK SALAD with TZATZIKI SAUCE
Serves 2-3

Salad
5 big tomatoes
1 English cucumber
1 red onion
30 raw olives
juice of 1/2 lemon
a pinch of salt

Tzatziki sauce
1/2 cucumber
1/4 cup red onion
1 cup almonds
1/4 cup water
1 teaspoon sea salt
juice of 1/2 lemon
greek seasoning mix

Greek seasoning mix
5 mint leaves
5 basil leaves
10 oregano leaves
1/4 cup red onion
1 clove of garlic
1 t paprika powder
1 t sea salt
For the salad, chop tomatoes, cucumber, red onion and halve olives. Mix salt and lemon juice and toss salad in it.
For the seasoning mix, shred all herb leaves, chop red onion, grate garlic and mix all ingredients.
For the tzatziki sauce, chop cucumber and red onion. Blend almonds with water until the mass has a creamy yogurt consistency. Add water if too thick. In a small bowl, mix yogurt, cucumber, red onion and add sea salt, the lemon juice and the seasoning mix.

Pour tzatziki over salad or dip veggies.
