After a huge juice or smoothie for breakfast, lots of fruit and a raw vegan dessert or raw vegan candy during the day, I mostly finish the day with a big bowl of green deliciousness. I usually mix greens with colorful veggies and use a simple dressing as lemon juice, tomato sauce or pesto.
However, last night, I was in the mood for something cheesy. So, I decided to make some healthy Cheezy Pizza Bites to accompany my salad (I know, it sounds too good to be true...). Using different sorts of nuts, you can create raw vegan cheeses that taste even better than original cheeses.
LAMBS LETTUCE with CHEEZY PIZZA BITES
Makes 1 big bowl full of green deliciousness
Salad
300 g of lambs lettuce, 1 head of butter lettuce or 3 romaine hearts
1 red bell pepper
1/2 cup of organic corn
8 cocktail tomatoes
Cheezy Pizza Bites
1/2 cup of cashews, soaked for 1 h
4 dried tomatoes
1/4 cup basil
Dressing
4 cocktail tomatoes
4 cocktail tomatoes
1/4 avocado
1/4 cup of water
Wash and chop salad, halve tomatoes, cut bell pepper in rings and mix all salad ingredients.
For the Cheezy Pizza Bites, blend cashews (without water from soaking), dried tomatoes and chopped basil until you get a creamy rich mass. Normally no extra water needs to be added. Let the cheeze age in the fridge, if you've got time or roll directly into bites.
For the dressing, blend all ingredients.
Sprinkle dressing over your salad and top with Cheezy Pizza Bites.
