BEET BURGERS


Are you in the mood for something savory? Try these raw vegan low fat beet burgers! They are super special and super yummy, because the main ingredient are super fabulous beets :) A lot of super here..but its true..this is burger heaven !!!


Beets give you super power: they are rich in minerals and vitamins (e.g. magnesium, phosphorus, iron, vitamins A, B and C) and cleanse the body! They can even prevent depression and various forms of cancer! These burgers are easy to prepare and consist only of fresh and raw veggies. They make a perfect satisfying dinner meal and are sooo delicious. You know you want them!

BEET BURGERS
Makes 4

Burger
1 cup chopped beets
1cup chopped sweet potato
1 cup chopped carrot
1/4 cup white onion
chives
salt to taste

Cheese
1/2 cup cashews, soaked for 1 hour
juice of 1/2 lemon
handful of dried tomatoes 
chives 
salt to taste

Tomatoes, butter lettuce, cucumber, chives or what else you like to add to your burger.

For the burgers, pulse beet, sweet potato, carrot, white onion, chives and salt. Take mass out of the mixer and squeeze water out. Form 4 burgers.
For the cheese, blend cashews, lemon juice, dried tomatoes, chives and salt.

Place burger on salad and top with cheese, tomato, cucumber and chives.
