PEANUT BUTTER & BROWNIE ICE CREAM

I made ice cream for ya! It was a beautiful day outside with a lot of sunshine and it directly made me crave this creamy deliciousness. This raw vegan ice cream is peanut butter, brownie and red fuits all in one. This tastes soo good and is far better than bought one. This ice cream is healthy, sweet and if you love the combination of peanut butter and jam and can only imagine how this tastes when paired with crunchy brownie pieces, you will love this dessert!

I personally think there is nothing better than raw vegan ice cream and I love to play around with the different flavors and textures. This ice cream is made of frozen bananas flavored with raw home made peanut butter and mixed with small brownie chunks. It is crunchy, rich and pairs heavenly with the tart red berry sauce. This is the perfect treat for a cozy afternoon or a great dessert for Valentine's day. Make a batch for yourself and/or your loved ones and enjoy this beautiful week.

PB BROWNIE ICE CREAM
Serves 2-3

Ice cream
4 large ripe bananas, frozen overnight
1 T raw peanut butter
2 T liquified raw coconut oil
3 pitted dates

Brownie dough
1/4 cup whole hazelnuts
4 pitted dates
1/2 t pure vanilla extract
1 t raw cacao powder

Berry sauce
1/3 cup mixed frozen berries (I used strawberry, cherry and backberry)
Juice of 1/2 lemon
few drops of pure vanilla extract
1/4 cup water

For the ice cream, blend dates, peanut butter and dates untils smooth. Add frozen bananas and blend in high speed blender until ice cream consistency. Freeze ice cream.
For the brownie pieces, process hazelnuts into flour, add dates, vanilla extract and cacao powder and process into small chunks. Mix brownie pieces with ice cream. Freeze again. For the berry sauce, blend berries with lemon juice, vanilla and add water up to desired consistency. Drizzle berry sauce over ice cream.

Enjoy!
