RAW CHOCOLATE MINT PUDDING


If you love chocolate pudding, but want to keep dairy, unhealthy fats, unnatural coloring and preserving agents low and instead boost your system with fresh ripe fruit, healthy nuts and even some herbs, you should check this recipe out. This is a raw vegan recipe for a special mint-infused chocolate pudding made only from almonds, banana, dates, vanilla, raw carob and mint. Because I love mint very much, I did not only add fresh mint leaves into the mixture but infused the used almond milk with mint (recommended for extra flavour and an amazingly fresh almond milk taste..also good on it's own!). This pudding is rich, creamy, chocolate-y and SO good. If you miss avocado here, check out my recipe for chocolate raspberry mousse. I didn't use avocado in this recipe, to keep the fat content low and I really like to use 1 banana and 1/2  cup nuts instead of nuts only for the same reason. Plus banana makes it fresh and even creamier. If you don't know carob, don't hesitate to ask me about it. I used it in this recipe, because I use raw cacao a lot and want to reduce my coffeine intake. But raw cacao would of course be fine as well. Enough said, make your own chocolate mint pudding :)


CHOCOLATE MINT PUDDING
Serves 2

1 large ripe banana
1/2 cup almonds, soaked overnight or at least for a few hours
4 ripe pitted dates
1/4 cup raw carob
1/2 cup mint leaves, packed
1/2 t pure vanilla extract
1 pinch sea salt
3/4 cup water 
1 T pure LOVE <3

Blend almonds with water and vanilla and add in 3/4 of your mint leaves. Let soak for 2 hours. Now, blend mint-infused almond milk with dates, banana, carob and sea salt and add a little bit more water if you like (pudding will set in the fridge too). Let your chocolate mint pudding sit in the fridge for at least 30 min.

TROPICAL PINEAPPLE MINT SMOOTHIE


This morning I somehow felt run down. My week was really busy and exciting with my new blog going online and my university projects and I was graving someting relaxing and refreshing. I decided to make a PINEAPPLE MINT SMOOTHIE, because pineapple always gives me a tropical spirit and mint is so cooling. Did you know that mint has been used for hundreds of years for its unique medical properties? There are more than two dozen species and the market is full of products like mint tooth paste. 
Mint is really amazing.
It is not only a breath and mouth freshener as most of you may know, but soothes several illnesses and diseases. If you want to know more about its health benefits continue reading here. If you can't wait to try this smoothie, continue with the recipe ;)
Firstly, mint activates several glands that secrete digestive enzymes and thereby facilitates digestion. Secondly, the strong aroma soothes nausea and headaches. This mint aroma can also relieve respiratory disorders by clearing up congestion of the nose, throat, bronchi and lungs. This is why mint is amazing for asthma patients-it relaxes and relieves congestion.
Mint is also a natural stimulant and can help prevent depression and fatigue. Just drop some menthol oil on your pillow before you go to bed and let it work on your mind while you sleep. These are only some of the health benefits of mint. Mint was also shown to cleanse skin, soothe seasonal allergies and aid in weight loss. Isn't it unbelievable how many health benefits ONE single natural herb has? Try this tropical pineapple mint smoothie to get in some fabulous mint :)


TROPICAL PINEAPPLE MINT SMOOTHIE
Makes 32 oz

4 ripe bananas
6 fresh mint leaves
1 cup frozen pineapple
2 cups water or nut milk

If you want to use fresh pineapple, add 3-4 ice cubes to chill your smoothie. If you want a sweeter smoothie, add 3 pitted dates.
Blend all ingredients and enjoy!
